Low Carb Peanut Butter Cookies

Ingredients
- 2 1/2 cups crunchy peanut butter
- 1/2 cup chopped mixed nuts (or whatever you have on hand)
- 1 cup splenda granular
- 2 teaspoons vanilla
- 4 eggs
Recipe
- 1 preheat oven to 400 degrees.
- 2 combine peanut butter, splenda, vanilla,and eggs. mix until well blended and smooth.
- 3 fold in the nuts.
- 4 drop by spoonfuls on greased cookie sheet.
- 5 bake 8-10 minutes.
- 6 will make about 1 dozen large cookies or 2 dozen small.
