Mint Shortbread Cookies

Total Time: 24 mins Preparation Time: 15 mins Cook Time: 9 mins

Ingredients

  • Servings: 24
  • 1 cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 2 2/3 cups flour
  • 1/4 teaspoon salt
  • 2 teaspoons mint extract
  • green food coloring
  • chocolate, for garnish

Recipe

  • 1 in a large bowl, cream together the butter and sugar until light and fluffy.
  • 2 beat in the egg, then stir in the mint extract.
  • 3 combine the flour and salt; stir into the sugar mixture.
  • 4 add several of drops of food coloring until desired shade of green, mixing well.
  • 5 roll into a log, wrap in plastic wrap and refrigerate for 1 hour.
  • 6 preheat oven to 400°f
  • 7 slice into 1/4-inch slices and place on cookie sheets.
  • 8 bake for 9 minutes in the preheated oven, or until lightly golden at the edges.
  • 9 remove from cookie sheets to cool on wire racks.
  • 10 drizzle with melted and/or dark chocolate if desired.
