Grandma Mudge's Raisin Filled Cookies

Ingredients

  • 2 1/2 cups raisins
  • 2 cups sugar
  • 2 tablespoons flour
  • 1 cup hot water
  • 2 cups vegetable shortening
  • 2 cups sugar
  • 1 teaspoon salt
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup milk
  • 3 teaspoons baking powder
  • 2 teaspoons baking soda
  • 7 cups flour

Recipe

  • 1 filling: grind raisins in food processor. raisins should not become a paste. in a heavy saucepan, combine ground raisins, sugar, flour and water. cook over medium heat, stirring until mixture thickens. it should not be runny. set aside to cool.
  • 2 cookie dough: in a large bowl, mix together in order. roll out to 1/4-inch thickness. cut into pairs. place one part of pair on ungreased cookie sheet. put 1 heaping teaspoon of filling in center. top with other half. seal edges by gently pressing together.
  • 3 bake at 400f for 8-10 minutes.
