Pineapple Brown Betty

Ingredients

• 4 ounces amaretti cookies
• 1/4 cup pecans
• 1/3 cup light brown sugar
• 1 tablespoon butter, cut up
• 1/2 teaspoon cinnamon
• 1 teaspoon vanilla extract
• 2 (20 ounce) cans pineapple chunks, drained

Recipe

• 1 preheat the oven to 350.
• 2 in a food processor, combine the cookies, pecans, brown sugar, butter, cinnamon and vanilla and pulse until cookies are finely ground.
• 3 in an 8 inch square baking dish, toss the pineapple with the crumb mixture.
• 4 bake for 30 minutes or until the pineapple is piping hot and the crumbs are crusty.
