Chocolate Cream Filled Cookies

Ingredients

  • Servings: 30
  • 6 tablespoons butter, softened
  • 1/4 cup white sugar
  • 1 large egg
  • 2 tablespoons corn syrup
  • 1 1/2 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/3 cup semisweet chocolate chips
  • 1 cup confectioners' sugar
  • 1/4 cup confectioners' sugar
  • 1/2 cup butter, softened

  • preheat oven to 350 degrees f (175 degrees c). grease 2 baking sheets.
  • using an electric mixer, beat 6 tablespoons butter and 1/4 cup sugar in a large bowl until creamy. add the egg; beat until smooth. beat in corn syrup. whisk together the flour and cocoa in a small bowl. beat half of the flour mixture into the butter mixture until well incorporated. beat in the remaining flour. divide dough in half.
  • on a lightly floured board, roll each half of the dough into a rectangle. cut each large rectangle into 1x3 inch rectangles. place cookies on prepared baking sheets, 2 inches apart. bake until firm, 10 to 15 minutes. let cookies stand on baking sheets for 5 minutes; remove to wire racks to cool completely.
  • while the cookies are baking, make the filling. heat chocolate chips in a small saucepan on lowest heat. stir until chocolate is almost completely melted. remove from heat; stir until smooth. allow to cool to room temperature. beat 1 cup confectioners' sugar and 1/2 cup butter in a large bowl until smooth. scrape the melted chocolate into the bowl; beat well.
  • spread 1/2 teaspoon filling on the bottom of 30 cooled cookies; top with remaining cookies. sprinkle filled cookies with confectioners' sugar.

  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 1 cup packed brown sugar
  • 1/2 cup white sugar
  • 1 tablespoon vanilla extract
  • 1 egg
  • 1 egg yolk
  • 2 cups semisweet chocolate chips

  • preheat the oven to 325 degrees f (165 degrees c). grease cookie sheets or line with parchment paper.
  • sift together the flour, baking soda and salt; set aside.
  • in a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended. beat in the vanilla, egg, and egg yolk until light and creamy. mix in the sifted ingredients until just blended. stir in the chocolate chips by hand using a wooden spoon. drop cookie dough 1/4 cup at a time the prepared cookie sheets. cookies should be about 3 inches apart.

Ingredients

  • Servings: 32
  • 1 (0.6 ounce) cake compressed fresh yeast
  • 2 teaspoons white sugar
  • 1 1/2 cups milk
  • 1 cup butter
  • 1/2 cup white sugar
  • 3 eggs
  • 5 1/2 cups bread flour
  • 1 teaspoon salt
  • 1/2 cup butter, softened

Recipe

    Cook Time: 15 mins Ready Time: 10 hrs 15 mins

  • crumble the compressed yeast into a small bowl, and mix in 2 teaspoons of sugar. set aside. in a small saucepan, heat milk until a skin forms on the top. remove from heat, and set aside to cool slightly.
  • place 1 cup of butter and remaining 1/2 cup of sugar into a large bowl. pour the hot milk over them, and stir until butter is melted. let the mixture cool to just above body temperature. beat in the eggs, one at a time mixing well after each one, then stir in the yeast mixture. add 3 cups of flour, and mix until well blended. gradually mix in the remaining flour, mixing as well as you can. the dough will be sticky. cover the bowl with a towel, and let rise in a warm place until doubled in size, about 1 hour.
  • after the dough has risen, punch down, cover, and refrigerate overnight.
  • divide the dough into four pieces. use one piece at a time, leaving the rest in the refrigerator. on a lightly floured surface, roll the piece of dough out into a 12 inch circle. spread about 2 tablespoons of butter over the surface. cut into 8 wedges, as you would a pizza. roll each wedge starting at the wide end, and ending at the point. place a lightly greased cookie sheet, and bend the ends so that they are crescent shaped. cover with a towel, and let rise in a warm place until doubled. this will take about 2 hours because the dough is cold.
  • preheat the oven to 375 degrees f (190 degrees c). bake for 15 minutes in the preheated oven, or until golden.
