Jujubes Candy

Total Time: 10 mins Preparation Time: 5 mins Cook Time: 5 mins

Ingredients

  • 2 ounces unflavored gelatin
  • 1 cup sugar
  • 2 1/2 cups strawberry puree, strained
  • granulated sugar or superfine sugar, to coat

Recipe

  • 1 prepare a 6-inch square pan by wetting it lightly with water, and wetting a knife or cookie cutter. or use a mold pan.
  • 2 stir together the gelatin and sugar in a medium saucepan, then add the puree and 2/3 cup water.
  • 3 stir over medium heat until the sugar and gelatin are dissolved.
  • 4 bring to a boil, then cover and boil for 5 minutes.
  • 5 pour into the prepared pan and allow to set completely.
  • 6 once set, turn out of the pan onto waxed paper. cut into squares or shapes with the prepared, wetted tool of your choice.
  • 7 roll candies in granulated or superfine sugar.

Power Peanut Butter Biscotti

Ingredients

  • 2 cups all purpose flour
  • 3/4 cup sugar
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup chunky peanut butter
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 large egg whites

Recipe

  • 1 preheat oven to 325°f.
  • 2 combine flour, sugar, baking soda and salt in a large bowl.
  • 3 combine peanut butter, vanilla, eggs and egg whites in a medium bowl, stirring well with a whisk.
  • 4 add peanut butter mixture to the flour mixture, stirring just until blended (do not overmix this dough).
  • 5 turn dough out onto a lightly floured surface; shape dough into a 10 inch long roll. place roll on a baking sheet coated with cooking spray; flatten to a 1-inch thickness.
  • 6 bake at 325f for 35 minutes.
  • 7 remove roll from baking sheet and cool 10 minutes on a wire rack.
  • 8 reduce oven temperature to 300°f.
  • 9 cut cooled rolls diagonally into 18 slices. place slices, cut sides down, on baking sheet. bake at 300f for 20 minutes. turn cookies over and bake an additional 20 minutes. (please note cookies will still be slightly soft in center but will harden as they cool).
  • 10 remove from baking sheet and cool completely on a wire rack.

Lemon Lime Cooler Cookies

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • 1 cup butter, softened (1 cup)
  • 1 1/2 cups sugar
  • 1/2 teaspoon double strength vanilla extract (or 1 tsp. regular strength vanilla)
  • 1/2 teaspoon lemon extract
  • 2 large eggs
  • 2 1/2 cups all-purpose flour
  • 4 -5 key limes, juice and grated peel (about 8 tablespoons juice and 1 tablespoon peel)
  • powdered sugar, for dusting

Recipe

  • 1 1. preheat oven to 375.
  • 2 2. cream together the butter, sugar, and extracts. add the eggs and mix well. gradually add the flour and mix well. lastly, mix in the grated lime peel and juice (save the squeezed limes.) drop the dough onto greased cookie sheets by rounded tablespoons. bake at 375 for 10-12 minutes.
  • 3 3. as soon as you have removed the cookies from the oven, pat the top of each cookie with squeezed lime to get a drop of juice on top of each cookie. then immediately dust well with powdered sugar.

  • 3 -4 russet potatoes (about 1 1/2 pounds)
  • 1 medium onion
  • 1 egg
  • salt and pepper
  • 1 tablespoon milk
  • 2 tablespoons oil
  • 1 fresh pineapple (peeled, cored, quartered and sliced)
  • 4 fresh oranges, in sections
  • 1 cup pitted prunes
  • 3/4 cup dry wine
  • 1/4 cup light brown sugar
  • 1/8 teaspoon ground cloves
  • 1/4 teaspoon cinnamon
  • 2 teaspoons grated orange zest

Recipe

  • 1 scrub potatoes; steam until almost tender. plunge into cold water, then peel. grate coarsely.
  • 2 grate onion; add.
  • 3 beat egg with salt, pepper, milk; add to potato-onion mixture.
  • 4 combine lightly.
  • 5 preheat oil on rimmed cookie sheet. drop by tablespoonfuls onto sheet and flatten with back of spoon. bake at 350f until bottoms brown, about 20 minutes. turn and brown other side, about 15 minutes more.
  • 6 makes 16 pancakes. serve with sour cream, applesauce, cinnamon sugar or jam, or with baked fruit compote.
  • 7 make baked fruit compote:.
  • 8 arrange pineapple slices, orange sections, and pitted prunes in a shallow 2-quart baking dish.
  • 9 pour wine over the fruit.
  • 10 combine brown sugar with spices and orange zest; sprinkle over fruit.
  • 11 cover and bake at 350f until pineapple is tender, about 45 minutes. makes 10 servings.

  • 1/2 cup butter
  • 1/2 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup raspberry jam
  • 1 cup confectioners' sugar
  • 1/4 teaspoon almond extract
  • 1 tablespoon hot water
  • 1/4 cup candied cherry, chopped

Recipe

  • 1 cream butter.
  • 2 add sugar, creaming well.
  • 3 beat in egg and vanilla.
  • 4 combine flour and baking powder; gradually add to creamed mixture.
  • 5 on a lightly floured surface, roll out dough to 1/8-inch thickness.
  • 6 cut into 2-inch rounds, and place on ungreased baking sheets.
  • 7 bake at 350°f (175°c) for 10 minutes or until very lightly browned at edges.
  • 8 cool thoroughly.
  • 9 spread half of the cookies with jam, and top with remaining cookies.
  • 10 combine confectioners' sugar, almond extract, and enough hot water to make a thin icing.

Pineapple Shortbread

Ingredients

  • 1 cup butter
  • 1/2 cup very fine sugar
  • 2 cups flour
  • 3/4 cup pineapple preserves

Recipe

  • 1 preheat the oven to 300. cream the butter and sugar together until light and airy, about 3 minutes.
  • 2 add the flour gradually, stirring until well blended.
  • 3 spread the dough evenly on an ungreased cookie sheet. bake for 33-39 minutes, or until golden brown. be careful not to scorch the edges.
  • 4 remove the cookie sheet from the oven, set it on a wire rack, and allow it to cool slightly.
  • 5 when the shortbread is cool enough to handle, but still malleable, spread it with pineapple preserves.

  • 2 loaves frozen bread dough
  • 1/2 cup blue bonnet butter (1 stick)
  • 1 (3 ounce) package vanilla pudding mix (not instant)
  • 1 tablespoon milk

  • 1 cup light brown sugar (packed)

Recipe

  • 1 thaw bread dough.
  • 2 grease 9" x 13" pan.
  • 3 tear one loaf of bread up into pieces and put in bottom of pan.
  • 4 melt butter in milk in small sauce-pan on stove top on medium heat.
  • 5 add brown sugar & cinnamon to melted butter & milk.
  • 6 add pudding and stir until dissolved.
  • 7 pour over torn-up bread dough in pan.
  • 8 tear up 2nd loaf of bread and place on top.
  • 9 cover with wax paper and let rise until double.
  • 10 bake at 350 degrees for 30 minutes.
  • 11 remove from oven and loosen edges of pan with butter knife.
  • 12 immediately turn upside down onto a cookie sheet covered with wax paper.

Roasted Banana Macadamia Cheesecake

Ingredients

  • 3 ripe unpeeled bananas
  • 1 1/2 cups vanilla wafer crumbs
  • 1/2 cup macadamia nuts, finely chopped
  • 1/2 cup dark brown sugar, packed
  • 1/3 cup unsalted butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 3/4 cup sugar
  • 5 large eggs
  • 1 tablespoon dark rum
  • 1 teaspoon vanilla extract

Recipe

  • 1 preheat oven to 400° and set a rack on the lower-middle level.
  • 2 place bananas (unpeeled) on baking sheet.
  • 3 roast until they turn black all over, approx 12 minutes.
  • 4 remove them to cool and reduce oven to 350°.
  • 5 for crust, combine cookie crumbs, nuts and brown sugar in food processor.
  • 6 pulse a few times to mix, then add melted butter and blend well.

  • 2 teaspoons baking powder
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 3/4-1 cup sugar
  • 1 pinch salt
  • 1 cup margarine, softened
  • 1 tablespoon orange juice
  • 1 teaspoon orange rind (or rind of 1 medium orange)
  • 1 lb strawberries or 1 lb apricot preserves or 1 lb canned cherry pie filling or 1 lb prepared poppy seed filling (mohn) or 1 lb apple pie filling (my favorite)

Recipe

  • 1 preheat oven to 350°f grease cookie sheets.
  • 2 place all ingredients in a large mixer bowl and beat together.
  • 3 you may add a drop more juice or flour, depending on the consistency of the dough.
  • 4 roll dough into a ball.
  • 5 divide into four parts.
  • 6 on a floured board or counter roll out each portion to about 1/4" thick.
  • 7 using a round biscuit or cookie cutter or cup, cut approximately 3" circle.
  • 8 place on greased cookie sheet.
  • 9 spoon 1/2 teaspoon filling in the middle of each circle.
  • 10 to shape into triangle, lift up the right& left sides, leaving the bottom down, and bring both sides to meet at the center above the filling.
  • 11 bring top flap down to the center to meet the two sides.
  • 12 pinch edges together.
  • 13 bake in a 350 f preheated oven for approximately 20 minutes or until lightly browned.

Pineapple Semifreddo Pie

Ingredients

  • Servings: 8
  • 6 5/8 ounces stella d' oro cookies
  • 2 tablespoons sugar
  • 4 tablespoons butter (melted)
  • 3/4 cup ricotta cheese
  • 1/2 cup sugar
  • 16 ounces pineapple chunks (coarsely chopped)
  • 1 cup heavy cream
  • 2 tablespoons confectioners' sugar

Recipe

  • 1 shell: heat oven to 350 degrees.
  • 2 remove 1 cookie and coarsely crush. set aside.
  • 3 place remaining cooies in a food processor and pulse to make fine crumbs. reserve 1/2 cup for filling.
  • 4 in a bowl, combine remaining crumbs and sugar. stir in butter. spread mixture over the bottom and up the sides of a 9 inch pie plate.
  • 5 bake for 10 minutes. cool completely.
  • 6 filling: in a large bowl, stir together ricotta cheese and sugar. set aside 1/4 cup of the pineapple for garnish. stir remaining pineapple into cheese mixture.
  • 7 in another bowl, beat together cream and confectioner's sugar until stiff. add to pineapple mixture and gently fold until just combined. fold 1/2 cup reserved cookie crumbs into pineapple mixture. plave into pie shell, mounding the filling.
  • 8 to garnish, sprinkle reserved pineapple and coarsely crushed cookie over filling. freeze 6 hours or overnite.
  • 9 to serve, remove pie from freezer and place in fridge 15 to 20 minutes for easy cutting.

Ingredients

  • Servings: 10
  • 1 potato, well-washed and cut into thin strips (russet preferred)
  • 3 tablespoons extra virgin olive oil, divided
  • salt and pepper, to taste
  • 1 (13 7/8 ounce) package pillsbury refrigerated classic pizza crust
  • 8 ounces mozzarella cheese, shredded (more, as desired)
  • 3 ounces deli roast beef, sliced and torn into bite-sized pieces
  • 1/4 cup beef gravy, hot (more, as desired)
  • 1 tablespoon fresh parsley, shredded for garnish

Recipe

  • 1 place the potato strips in a bowl of cold water for 20 minutes.
  • 2 after the potatoes have soaked for around ten minutes, preheat oven to 400°f.
  • 3 thoroughly dry potatoes and place on a baking sheet sprayed with cooking spray (pam).
  • 4 drizzle with about two tablespoons of olive oil, and season with salt and pepper.

  • 20 ounces brownie mix, betty crocker original supreme preferred (with chocolate syrup pouch)
  • 1/3 cup vegetable oil
  • 1/4 cup water
  • 2 eggs
  • 17 1/2 ounces chocolate chip cookie mix, betty crocker brand preferred
  • 1/2 cup butter or 1/2 cup margarine, softened
  • 1 egg
  • 16 ounces chocolate frosting, betty crocker rich & creamy preferred

Recipe

  • 1 heat oven to 350ºf.
  • 2 grease bottom only of 13x9-inch pan.
  • 3 make brownie mix as directed on box, using oil, water and 2 eggs; spread in pan.
  • 4 make cookie mix as directed on pouch, using butter and 1 egg.
  • 5 drop dough by rounded tablespoonfuls evenly onto brownie batter; press down lightly.
  • 6 bake 35 to 40 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean.

Recipe

  • 1 cream butter and sugar. preheat oven to 350°f.
  • 2 stir in yolks one at a time then add lemon peel and vanilla; stir to combine.
  • 3 next add 3 cups flour and the baking powder and stir well. if needed, add 1/2 cup flour to stiffen dough.
  • 4 press all-except 1 cup-of dough into a cookie sheet and spread with your choice of jam. we've traditionally used raspberry, strawberry or plum.
  • 5 roll out remaining cup of dough on a floured surface and cut into strip's. lay strip's in a criss-cross pattern on top of jam.

  • 2 -3 teaspoons ginger

  • 1 preheat oven to 325 degrees.
  • 2 cream butter and sugar.
  • 3 stir in eggs,molasses, and vinegar.
  • 4 sift and add the flour, soda, ginger, cinnamon, and cloves.

  • 5 ounces soft butter or 5 ounces soft margarine
  • 3 ounces caster sugar
  • 2 teaspoons vanilla essence or 1 teaspoon vanilla extract
  • 5 ounces self raising flour
  • desiccated coconut or oats

Recipe

  • 1 heat oven to 180ºc, 350ºf, gas mark 4. grease two baking trays.
  • 2 cream the butter or margarine with the sugar until very light and fluffy. beat in the vanilla essence or extract.
  • 3 stir in the flour and mix well.
  • 4 roll walnut sized pieces of the mixture into balls and toss in rolled oats or desiccated coconut.

  • 1 cup onion, diced
  • 1/2 cup celery, finely diced

  • 2 organic vegetable bouillon cubes

  • 1 (16 1/2 ounce) package pillsbury sugar cookie dough (1-2 packages. depends on how thick you want your crust to be, i use 2)
  • 3/4 cup confectioners' sugar
  • 2 teaspoons vanilla
  • 2 (8 ounce) packages cream cheese (softened)
  • 1 (8 ounce) container cool whip (thawed)
  • fresh fruit, any kind you may like (i.e. kiwi, strawberries, grapes, oranges, bananas, etc.)

  • 1 cut sugar cookie dough into 1/4-inch thick pieces.
  • 2 lay it down on a greased pizza pan or rectangular pan.
  • 3 press dough till pressed together.

  • 1 tablespoon olive oil
  • 1 package fast rise yeast
  • 1 teaspoon sugar

  • 1 clove crushed garlic
  • 1 tablespoon emiril lagassie pizza seasoning

  • 1 for crust: combine crumbs and butter.

Jolly Reindeer Cookies

Ingredients

  • 1 cup sifted powdered sugar
  • 2 tablespoons whipping cream
  • 1 teaspoon vanilla extract
  • 12 graham cracker squares (2 1/2-inch square)
  • 24 miniature chocolate chips
  • 12 red cinnamon candies
  • 12 small pretzels, broken in half

Recipe

  • 1 combine first 3 ingredients; mix well, and set aside.
  • 2 cut a graham cracker diagonally in half using a gentle motion with a serrated knife.
  • 3 spread a small amount of frosting over top side of cracker half. top with remaining cracker half, placing cut sides opposite each other so 2 narrow ends meet to for reindeer noise.
  • 4 spread small amount of frosting to cover top cracker.
  • 5 gently press chocolate morsels on reindeer for eyes and cinnamon candy for nose.
  • 6 add pretzel halves for antlers.
  • 7 repeat procedure to use remaining ingredients.
  • 8 let dry on a wire rack.

  • 1 heat oven to 375°f mix half of the cake mix (dry), the butter, almond extract and egg in large bowl until smooth.
  • 2 stir in remaining cake mix.
  • 3 divide dough into halves.
  • 4 roll each half 1/8 inch thick on lightly floured board. (i like using a half flour, half powdered sugar mix.).
  • 5 cut into desired shapes.
  • 6 or roll into 1-inch balls, place on ungreased cookie sheet and flatten with the bottom of a glass.

  • 1 in large bowl, cream margarine, sugars, molasses, vanilla, and eggs.

  • 6 bake for 10-12 minutes,or until just starting to brown around the edges.

  • 8 while the cookies bake prepare the filling.
  • 9 in small bowl, dissolve the salt in the hot water.
  • 10 allow this to cool.
  • 11 combine marshmallow cream, shortening, powdered sugar, and vanilla in med bowl; mix on hi until fluffy.
  • 12 add the cooled salt water and mix well.
  • 13 spread filling on flat side of one cookie, press 2nd cookie on top.

  • 1 cream butter and sugar. add eggs, vanilla and flour. work until smooth. put mix in a cookie tube dispenser. squeeze out any shape you like onto greased cookie sheet. bake at 325 til golden brown.

  • 1 preheat toaster oven to 350. melt the margarine in a small bowl for about 20 seconds in the microwave. add in the egg whites, oil and sugars. mix well. add in the flour and baking soda, mix to form batter. add in chocolate chips or raisins. spoon into two mounds on sprayed toaster oven baking sheet. bake for ten minutes.
