Lemon Lover's Cookies

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • 3/4 cup butter, softened
  • 3 tablespoons sugar
  • 2 teaspoons lemon juice
  • 1 1/4 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon lemon peel, grated
  • 1/4 cup butter, softened
  • 1 cup confectioners' sugar
  • 2 teaspoons lemon juice
  • 1 teaspoon lemon peel, grated

Recipe

  • 1 in small bowl, cream butter and sugar until light and fluffy.
  • 2 beat in lemon juice.
  • 3 combine flour, cornstarch and lemon peel; gradually add to creamed mixture and mix well.
  • 4 shape into 1 1/2 inch roll; wrap in plastic wrap.
  • 5 refrigerate for 1 hour or until firm.
  • 6 unwrap and cut into 1/4 inch slices.
  • 7 place 2 inches apart on ungreased baking sheets.
  • 8 bake at 350 for 8-10 minutes or until edges are golden brown.
