Gluten Free, Egg Free, Nut Free, Sugar Free Cookies!

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 3 medium ripe bananas, mashed
  • 1/3 cup butter or 1/3 cup margarine, melted
  • 2 cups uncooked quick-cooking gluten-free oats
  • 1/4 cup water
  • 1/2 cup raisins
  • 1 1/2 teaspoons vanilla extract

Recipe

  • 1 heat oven to 350ãรข??â°f.
  • 2 mix all the ingredients together in a bowl. its important to mix the ingredients thoroughly so all of the oats will be evenly moistened.
  • 3 let the cookie batter stand for about five minutes, then drop heaping teaspoons of dough onto a greased cookie sheet.
  • 4 bake for approximately 15 to 20 minutes or until the cookies are lightly browned.
  • 5 remove to a wire rack to cool. makes about 2 1/2 dozen cookies.

  • 1 cup butter (salted if available)
  • 1 cup brown sugar
  • soda cracker (salted if available)

  • 1 line a cookie sheet with foil then cover completely with the crackers.
  • 2 heat sugar and butter slowly until it boils, then stir constantly for 4 minutes. pour carefully over crackers. place pan in pre-heated oven at 325 degrees for 16 minutes.
  • 3 shake chocolate chips over top of mixture after removing from oven. they will melt in about 5-10 minutes. use a spoon or spatula to smooth out the chocolate, let this cool down for 15 minutes (at least), then freeze them for at least 1 hour before you break them. keep refrigerated and serve cold.

Gluten Free/ Dairy Free Peanut Butter Cookies

  • 1 tablespoon flax seed, ground
  • 3 tablespoons water
  • 1 cup natural organic crunchy peanut butter
  • 1/2 banana, mashed
  • 1/4 cup brown sugar, packed
  • 1 teaspoon baking soda

Recipe

  • 1 preheat oven to 350.
  • 2 microwave flax seed and water for 30 seconds until you get gel like consistency (this is your egg).
  • 3 mix balance of ingredients together.
  • 4 drop teaspoonfuls onto an ungreased cookie sheet.
  • 5 bake for 9-10 minutes.

Low Fat Eggplant (aubergine) Lasagna

Ingredients

  • Servings: 4
  • 1 (8 ounce) bag shredded part-skim mozzarella cheese
  • 1 (8 ounce) bag shredded fat free mozzarella cheese
  • 1/2 cup grated low-fat parmesan cheese
  • 1 (29 ounce) jar ragu chunky tomato onion & garlic sauce (this sauce is only 3grams of fat per serving and is very good!)
  • olive oil flavored cooking spray
  • 2 large eggplants

Recipe

  • 1 preheat oven to 425°f.
  • 2 slice eggplant about 1/4" thick, spray with non-stick spray.
  • 3 place eggplant on a cookie sheet and bake for about 15-20 minutes or until nicely browned.
  • 4 this can be done ahead of time, like on the weekend, so this is a lot quicker for a weeknight meal.
  • 5 spray an 8x8-inch baking dish with the non-stick spray and put a small amount of sauce in the bottom of it.
  • 6 place a layer of eggplant on top of the sauce.
  • 7 top the eggplant with the 2 kinds of mozzarella and sprinkle a little parmesan on top.
  • 8 top with a little bit of sauce and continue layering until either the ingredients are used up or you run out of room in the pan (i usually get 3 layers in).
  • 9 top off with the rest of the cheeses.
  • 10 bake in a preheated oven 35-45 minutes or until cheeses are melted and sauce is bubbling.
  • 11 enjoy!

  • 3/4 cup creamy peanut butter
  • 1/3 cup sugar
  • 1/3 cup light brown sugar, packed
  • 1 egg

  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 3/4 cups mini kisses chocolate chips (10 oz. pkg)

  • 2 beat together the shortening and peanut butter. beat in sugar and brown sugar. beat in egg, milk, and vanilla.

  • 1 (225 g) box ritz crackers
  • 1 (300 ml) can sweetened condensed milk
  • 1 (200 g) package skor english toffee bits, chippits

Recipe

  • 1 crumble the ritz crackers really well. (easiest to do while they are still in the sealed bag.).
  • 2 place the crackers in a large mixing bowl and add the skor chippits and the condensed milk.
  • 3 mix all three ingredients. you may need your hands to mix it up well.
  • 4 place in a square pan.
  • 5 heat in the oven at 350 degrees farenheit for 20 minutes.

Easy Praline Graham Cracker Cookies

Total Time: 4 hrs 8 mins Preparation Time: 4 hrs Cook Time: 8 mins

Ingredients

  • 2 1/2 cups whole milk, scalded
  • 3 egg yolks
  • 1 egg
  • 1/2 cup sugar
  • 3/4 cup crisco cooking oil
  • 1/2 cup heavy cream
  • 1 teaspoon salt
  • 2 ounces fresh yeast
  • 7 -8 cups flour
  • melted shortening, for brushing dough balls
  • melted butter, for brushing baked kolace

Recipe

  • 1 scald milk and set aside to cool until lukewarm.
  • 2 remove 1/2 cup of the cooled scalded milk to a small bowl, add 1 teaspoon of the sugar and stir in yeast. let work for about 10 minutes.
  • 3 while yeast is working, beat the eggs, add sugar, then cream, oil, salt and the rest of the scalded milk.
  • 4 in large bowl have ready 6 1/2 cups flour. make a well in the flour and add the dissolved yeast. stir and then add in the beaten ingredients.
  • 5 beat until smooth.
  • 6 add 1/4 cup of flour at a time until you have a slightly sticky dough.
  • 7 beat well with a wooden spoon for 5 minutes.
  • 8 let dough rest 10 minutes and then stir well with wooden spoon again.
  • 9 cover with a tea towel and let rise about 1 hour, until doubled in bulk.
  • 10 stir down and cut off tablespoon size balls.
  • 11 shape into balls and place on a greased cookie sheet about 2 inches apart.
  • 12 brush with melted shortening.
  • 13 let rise until doubled.
  • 14 make a depression in the middle of the ball with your thumb, and press outward to form an opening for the filling about the size of a 50 cent piece, pressing the bottom paper thin without tearing the dough.
  • 15 add a teaspoon of filling to each kolace and smooth out to edge of opening. i use solo brand poppy seed filling for most as that is our favorite and cherry pie filling for the rest.
  • 16 let the filled kolace rise 15-20 minutes or they will look like a volcano erupting when baked.
  • 17 bake at 425 for 8 minutes until lightly browned.
  • 18 remove from pan with a spatula as you would cookies and cool on wire rack. brush kolace with melted butter as soon as removed from oven to keep the dough soft.
  • 19 these freeze well once they are cooled--if they last that long.

Italian Lemon Drop Cookies

Ingredients

  • crisco® original no-stick cooking spray
  • 2 cups pillsbury best® all purpose flour
  • 1/3 cup sugar
  • 1 tablespoon baking powder
  • 1/4 stick crisco® baking sticks all-vegetable shortening or 1/4 cup crisco® all-vegetable shortening
  • 1/2 cup milk
  • 1 large egg, beaten
  • 2 teaspoons lemon extract
  • 2 cups powdered sugar
  • 1/3 stick crisco® baking sticks all-vegetable shortening or 1/3 cup crisco® all-vegetable shortening
  • 1/4 cup warm milk, divided
  • 1 teaspoon lemon extract

Recipe

  • 1 heat oven to 375ºf. coat baking sheet lightly with no-stick cooking spray. combine flour, sugar and baking powder in a large bowl. add shortening. beat with electric mixer on low speed until shortening is completely blended into flour mixture. add milk, egg and lemon extract, mixing just until blended.
  • 2 roll dough into 1-inch balls. place 1-inch apart on prepared baking sheet. bake 10 to 12 minutes or until lightly browned. cool completely on baking sheet on wire rack.
  • 3 for frosting, beat powdered sugar, shortening, 2 tablespoons warm milk and lemon extract in medium bowl with electric mixer on low speed until blended. beat in additional warm milk, a little at a time, until desired consistency. spread on top of cookies.

Hot Oatmeal "cookie"

  • 1/2 cup quick oats
  • 1/4 cup wheat bran
  • 1 cup milk
  • 1 teaspoon butter
  • 2 teaspoons sugar
  • 1 teaspoon vanilla
  • 1/8 cup raisins
  • 1/2 teaspoon cinnamon

Recipe

  • 1 over medium heat, bring milk to a low boil, stirring to prevent sticking to pan.
  • 2 add oatmeal, wheat bran, sugar, raisins, cinnamon, and vanilla.
  • 3 reduce heat to a simmer, continue stirring until desired thickness.
  • 4 serve immediately and top with butter.
  • 5 for those that are lactose intolerant, you can substitute vanilla flavored soy milk for regular milk and omit the vanilla.
  • 6 for those that wish a no sugar version, you can substitute equal amounts of splenda for the sugar.

Raw Oatmeal Goji Cacao Cookies

Total Time: 12 hrs 25 mins Preparation Time: 25 mins Cook Time: 12 hrs

Ingredients

  • 2 cups oats (soaked oat groats overnight)
  • 1/2 cup almonds or 1/2 cup hazelnuts
  • 1/2 cup goji berry
  • 1/4 cup cacao, nibs
  • 1/2 cup agave syrup (or other liquid sweetener such as maple syrup or honey)
  • 1/2 cup cashews (ground to a fine powder)

Recipe

  • 1 using a food processor, blend the soaked oat groats in a food processor until the batter comes together. put into a large bowl.
  • 2 in the food processor pulse the almonds (or hazelnuts) until you have a course chop. remove and add to the oat groats.
  • 3 add the goji berries, cacao nibs and your sweetner. keep in mind the sweetner will affect the taste, but it probably will be good no matter which one you use.
  • 4 also the liquid sweetener will make this very very sticky. if you want to cut back on the sweetener that wouldn't hurt.
  • 5 mix all the ingredients in the bowl well.
  • 6 grind the cashews to a fine powder. be careful not to let them grind too long, you don't want cashew butter.
  • 7 put the cashews in a flat bowl and spread it out evenly on the bottom.
  • 8 using a tablespoon measure scoop out some of the oat mixture and put it in the cashew powder and roll to coat.
  • 9 when done all the little balls, put them into the dehydrator to dry. use the plastic mesh sheets for these, not the slippery teflex ones.
  • 10 drying can take up to 12 hours at 110'f, depending on how thick your cookies are.
  • 11 pat each ball down to the desired thickness. also how dry it is in your house can affect the drying time, so check them now and again during the first 6 hours.
  • 12 at about 6 hours flip the cookies and dry another 6 hrs if necessary.
  • 13 these look so pretty with the bright goji berries and the dark cacao nibs. its very festive! you could also add some dried cranberries/blueberries or whatever you have in the pantry.

Mini Lemon Sandwich Cookies

  • 2 cups all-purpose flour
  • 1 cup butter, softened
  • 1/3 cup whipping cream
  • 1/4 cup granulated sugar
  • 1 teaspoon lemon, rind of
  • 1/8 teaspoon lemon extract
  • additional granulated sugar
  • 3/4 cup powdered sugar
  • 1/4 cup butter, softened
  • 1 -3 teaspoon lemon juice
  • 1 teaspoon vanilla
  • yellow food coloring (optional)

Recipe

  • 1 for cookies, combine flour, 1 cup butter, whipping cream, 1/4 cup granulated sugar, lemon peel and lemon extract in medium bowl.
  • 2 beat 2 to 3 minutes, scraping bowl often until well blended.
  • 3 divide dough into thirds.
  • 4 wrap each portion in waxed paper; refrigerate until firm.
  • 5 preheat oven to 375 degrees. roll each portion of dough to 1/8-inch thickness on well-floured surface.
  • 6 cut dough with 1-1/2-inch round cookie cutter. dip both sides of each cookie in additional granulated sugar.
  • 7 place 1 inch apart on ungreased cookie sheets. pierce with fork.

Ingredients

  • 4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter
  • 1 1/2 cups sugar
  • 1 large egg
  • 1/2 cup sour cream
  • 2 teaspoons lemon extract
  • 2 tablespoons lemon zest, grated
  • 3 tablespoons lemon juice

Recipe

  • 1 sift flour with baking powder, baking soda and salt.
  • 2 in large bowl of electric mixer, cream butter and sugar,add egg and beat on medium speed until light and fluffy.
  • 3 at low speed, beat in sour cream, lemon extract and grated lemon zest until smooth.
  • 4 gradually add flour mixture, beating until well combined.
  • 5 form dough into a ball, wrap in foil and refrigerate overnight.
  • 6 divide dough into 4 parts.
  • 7 refrigerate until ready to roll out.
  • 8 on floured surface roll dough, one part at a time, 1/4-inch thick.

  • 1/2 cup margarine
  • 3 ounces cream cheese
  • 4 tablespoons powdered sugar
  • 2 tablespoons sugar
  • 2 egg yolks
  • 2 cups flour
  • 2 teaspoons baking powder
  • fruit filling, of your choice

Recipe

  • 1 blend margarine, cream cheese, powdered sugar, sugar and egg yolks.
  • 2 add baking powder and flour.
  • 3 chill for 30 minutes.
  • 4 roll between 2 sheets of waxed paper until thin.
  • 5 cut in 3 inch squares.
  • 6 place 1 t. filling in center of square.
  • 7 fold two opposite corners of square to the center, leaving other ends open.
  • 8 bake on cookie sheet for 10 to 15 minutes in a 350 oven.

Peppery Snaps

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 cup whole wheat flour
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon ground aniseed
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon pepper
  • 1 cup light brown sugar, packed
  • 3 tablespoons light molasses
  • 3/4 cup butter, softened
  • 1 egg

Recipe

  • 1 combine first seven ingredients, set aside.
  • 2 in a bowl, beat the brown sugar, molasses, butter and egg.
  • 3 stir in dry ingredients, mix well. chill for 1 hour.
  • 4 shape into 1" balls.
  • 5 roll in sugar and place on ungreased baking sheets.
  • 6 bake at 350f for 10-13 minutes.
  • 7 cool cookies about 1 minute before removing to wire racks.

  • 4 teaspoons yeast
  • 2 cups milk
  • 3/4 cup butter or 3/4 cup margarine
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 1 teaspoon cardamom (optional)

Recipe

  • 1 this is the same ingredients as for the cinnamon rolls.
  • 2 after rising, divide into pieces (about 40).
  • 3 make round rolls, let rise 30 minute
  • 4 bake at 225 c (450 f), 5-10 min, or until golden.

  • 6 divide all rolls into halves.
  • 7 put on cookie sheet, roast in 450 f (225 c) for 5-10 minute

Hot Ham And Cheese Roll

Ingredients

  • Servings: 2
  • 1 (8 ounce) package refrigerated crescent dinner rolls
  • 1/4-1/2 lb honey ham deli meat
  • 1/2-1 cup sharp cheddar cheese, shredded
  • 1 tablespoon honey mustard
  • 1 tablespoon miracle whip

Recipe

  • 1 on a greased cookie sheet, roll out the crescent rolls so a rectangle is formed (smooth the seams together).
  • 2 spread evenly with mustard and miracle whip.
  • 3 evenly distribute the ham.
  • 4 sprinkle with cheese.
  • 5 roll-up length wise and secure ends.
  • 6 bake 350°f for 20-30 minutes (watch after 20 so as not to burn).
  • 7 let sit 5 or so minutes before cutting.

  • 1/2 cup margarine, softened
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 large egg, at room temperature
  • 1 cup all-purpose flour
  • 1 pinch salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup rolled quick oats (not instant)
  • 1/2 cup medium unsweetened coconut
  • 1 cup pecan pieces
  • 1 cup pre-frozen skor english toffee bit

Recipe

  • 1 preheat oven to 350 degrees f.
  • 2 cream together margarine, brown and sugars and vanilla extract until light and fluffy.
  • 3 add egg and beat well.
  • 4 sift in flour, salt, baking powder and soda.
  • 5 stir in oats and coconut.
  • 6 lastly, stir in pecans and skor bits.
  • 7 form into tablespoon sized balls (or use a 1 ounce ice cream scoop) and place a dozen at a time on a shiny baking sheet sprayed with pam.
  • 8 do not flatten.

Kale Chips

Total Time: 27 mins Preparation Time: 10 mins Cook Time: 17 mins

Ingredients

  • Servings: 8
  • 1 bunch kale
  • 2 tablespoons wine vinegar
  • 2 tablespoons olive oil
  • 3 tablespoons nutritional yeast
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon cayenne
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt

Recipe

  • 1 preheat oven to 375º.
  • 2 wash kale and pat dry. tear into "bite-sized" pieces.
  • 3 place kale in a large bowl and add all remaining ingredients.
  • 4 using your hands, toss and rub the kale to make sure each leaf is evenly coated with the oil/vinegar/spice mixture.
  • 5 place the kale leaves in a single layer on a cookie sheet. you will most likely have to do this in at least two batches, unless you have a very large baking sheet. make sure the leaves are spread out on the sheet - if they are all clumped up together they will steam and will not become crispy. sprinkle with a little more nutritional yeast, if you like. i usually cover the baking sheet in parchment paper for easier cleanup.

  • 1 2/3 cups coarsely crushed vanilla wafers
  • 1 1/3 cups chopped pecans
  • 2/3 cup powdered sugar
  • 1/4 teaspoon finely grated orange zest
  • 3 tablespoons thawed orange juice concentrate (do not dilute)
  • 2 tablespoons orange liqueur, such as grand marnier, cointreau or 2 tablespoons triple sec
  • 2 teaspoons light corn syrup

Recipe

  • 1 in a food processor, process the vanilla wafers and 1 cup of the pecans until finely ground.
  • 2 add the powdered sugar and orange zest and process until evenly incorporated.
  • 3 with the motor running, add the orange juice concentrate, orange liqueur, and corn syrup through the feed tube and process just until well blended.
  • 4 if the mixture seems too soft to handle, let it stand for a few minutes until firm; if it seems too dry and crumbly, sprinkle in a little water and process briefly to incorporate.
  • 5 finely chop the remaining 1/3 cup of pecans.
  • 6 spread them in a shallow bowl.

  • 4 scoop tablespoonfuls of dough, roll into 1-inch-diameter balls and place on ungreased baking sheets, 1 inch apart. with the small end of a melon baler, scoop out the center of the dough balls. do not scoop all the way through the cookie. (i've found that a melon baller doesn't give as generous of a jam cup as i would like so i tend to form larger shallower holes in my cookies by hand) place ½ teaspoons of jam in the center of each dough ball. place scooped-out dough back into mixing bowl to use to form more cookies.
  • 5 bake 22-24 minutes or until light golden brown. transfer to a cool, flat surface.

  • 3 mix in all of the baking powder and gradually add the flour. blend until the flour is all incorporated and the dough is firm.
  • 4 place the dough on a floured surface and knead until firm enough to roll, adding flour as needed. divide the dough into 6 equal portions, then roll each piece into a 9 inch square about 1/4 inch thick.
  • 5 spread 3 heaping tablespoons of the filling over the top third of the dough, then roll length wise. seal the roll and seal the ends tucking then underneath. place the rolls, seal side down on the ungreased baking sheet.
  • 6 bake for 25 minutes or until golden in colour.
  • 7 once cooled, frost the top of the rolls then sprinkle with the coloured candy. let the frosting set until hard then slice the rolls into 1 inch pieces or desired thickness.
  • 8 filling: either use a thick jam, pie filling or marmalade, or mix the regular jam with any of the desired ingredient until the jam is thick.
  • 9 frosting: whip the egg and sugar until thick and spreadable, about 3 - 5 minutes.

Recipe

  • 1 preheat oven to 350°.
  • 2 blend butter with ice cream, then add flour, blend well. dough will be thick.
  • 3 roll into walnut size balls, depress centers with thumb.
  • 4 place on cookie sheet and top with spoonful of filling.
  • 5 bake 15 minutes.
  • 6 tops will not brown. bottoms will be lightly browned.
  • 7 cool completely and dust heavily with powdered sugar before serving. if cookies are allowed to sit, simply re-dust cookies with powdered sugar if necessary before serving.

  • 1 cup chopped pecans (optional)
  • 1 cup butter
  • 2/3 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla

  • 1 melt together the chocolate chips and pecans.
  • 2 set aside to cool.
  • 3 cream together the butter, sugar, salt, vanilla, and flour.
  • 4 stir in chocolate mixture.
  • 5 swirl slightly.
  • 6 drop by teaspoonfuls onto ungreased baking sheet.
  • 7 flatten with a greased glass dipped in sugar.
  • 8 bake for 10 minutes at 350 degrees.

Marbled Chocolate Peanut Butter Cookies

  • 1 1/4 cups butter, softened
  • 2 cups sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 3/4 cup cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Recipe

  • 1 combine flour, cocoa, baking soda and salt in a small bowl.
  • 2 cream butter and sugar until light and fluffy. beat in eggs and vanilla.
  • 3 slowly blend the dry mix into butter mixture.
  • 4 make small (teaspoonfuls) balls of the cookie dough. press your thumb in the middle of the ball (like a thumbprint cookie). put a small dollop of peanut butter in the indent. press a little extra dough on top of the cookie to cover the peanut butter (its okay if a little is still showing). place onto ungreased cookie sheet, 2 inches apart.
  • 5 bake in a 350 degree oven 10 minutes.

Ingredients

  • 1 1/8 cups butter
  • 1 cup granulated sugar
  • 4 eggs, beaten
  • 6 cups all-purpose flour
  • 6 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 cup orange juice
  • 1 teaspoon lemon extract
  • 2 cups confectioners' sugar
  • milk or water, 1 small amount

Recipe

  • 1 preheat oven to 400 degrees.
  • 2 cream together butter, sugar, eggs and extract.
  • 3 mix dry ingredients together in a seperate bowl.
  • 4 add dry ingredients and oj to creamed mixture as follows:.
  • 5 1/3 of the dry, 1/3 oj, 1/3 dry, 1/3 oj, 1/3 dry, 1/3 oj. mixing well after each addition.
  • 6 drop by 1/2 teaspoonful in high mounds on greased cookie sheet about 1.5 inches apart.
  • 7 bake at 400 degrees for 8 - 10 minutes. remove to cooling rack.
  • 8 when cool, mix together confectioners sugar and small amount of milk or water to make a slightly loose glaze. dip just the tops of the cookies into the glaze and set on waxed paper to set up. if desired, sprinkle colored sugars on glaze while still wet.
