Ricotta Biscotti

Total Time: 45 mins Preparation Time: 30 mins Cook Time: 15 mins

Ingredients

  • 2 cups sugar
  • 1 cup margarine (not too soft)
  • 2 cups part-skim ricotta cheese
  • 3 eggs
  • 2 teaspoons vanilla
  • 1 teaspoon baking soda
  • 4 cups flour
  • 1/2 cup margarine
  • 2 teaspoons vanilla
  • 1/4 cup milk
  • 1/8 teaspoon salt
  • 2 egg yolks
  • 3 1/2 cups sifted powdered sugar
  • food coloring (optional)
  • candy sprinkles (optional) or multicolored sugar nonpareils (optional)

Recipe

  • 1 mix together sugar and margarine in large bowl add ricotta, eggs, and vanilla stir in baking soda, mix well continue mixing, slowly add in flour roll dough into small balls and place on ungreased cookie sheet, flouring hands before you roll each ball bake at 375 for 10-15min or until slightly browned let cool, take off cookie sheet, then brush on icing and sprinkle on sprinkles while icing is still wet let cookies sit out so the icing will dry for icing mix all ingredients except powdered sugar and food coloring together add powdered sugar and food coloring (as desired) brush on cookies and sprinkle them with nonpareils, sprinkles, etc.
