Easy Freeze Sweet Corn

Total Time: 20 mins Preparation Time: 15 mins Cook Time: 5 mins

Ingredients

  • 14 cups raw corn, cut from cob (about 24 -30 ears)
  • 3/4 cup sugar
  • 7 cups water
  • 1/8 cup salt

Recipe

  • 1 remove kernels from cob with a wide chefs knife.
  • 2 put into a large pot, add sugar and salt.
  • 3 add enough water to just cover corn, stir well and bring to a boil.
  • 4 boil 1 to 5 minutes and remove from heat.
  • 5 pour through a colander and reserve liquids. place kernels onto cookie sheets to cool.
  • 6 scoop corn into date marked pint or quart freezer bags, include a small amount of reserved water in each bag.
  • 7 seal bags removing excess air, lay flat and freeze.
