Oatmeal Chocolate Chip Cookies

Ingredients
- 1 1/2 cups softened butter or 1 1/2 cups margarine
- 3/4 cup sugar
- 3/4 cup brown sugar
- 2 eggs
- 1 vanilla beans, cut and scraped or 2 teaspoons vanilla extract
- 1 1/2 cups flour
- 1 1/2 cups oat flour (see note)
- 1 teaspoon baking soda
- 2 -3 cups chocolate chips
Recipe
- 1 put oatmeal into a food processor and pulse until flour- like texture.
- 2 cream butter and sugars together.
- 3 add egg and vanilla. beat until smooth.
- 4 add flours and baking soda, mix until blended.
- 5 add chocolate chips.
- 6 drop by tablespoonfuls onto cookie sheets. i use a cookie scoop.
- 7 flatten cookies slightly.
- 8 the dough can be frozen at this point, you can either bake from frozen or thaw and bake.
- 9 bake at 350 for 8-10 mins for soft cookies, 10-12 mins for crunchier cookies.
