Oatmeal Chocolate Chip Cookies

Total Time: 18 mins Preparation Time: 10 mins Cook Time: 8 mins

Ingredients

  • 1 1/2 cups softened butter or 1 1/2 cups margarine
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 vanilla beans, cut and scraped or 2 teaspoons vanilla extract
  • 1 1/2 cups flour
  • 1 1/2 cups oat flour (see note)
  • 1 teaspoon baking soda
  • 2 -3 cups chocolate chips

Recipe

  • 1 put oatmeal into a food processor and pulse until flour- like texture.
  • 2 cream butter and sugars together.
  • 3 add egg and vanilla. beat until smooth.
  • 4 add flours and baking soda, mix until blended.
  • 5 add chocolate chips.
  • 6 drop by tablespoonfuls onto cookie sheets. i use a cookie scoop.
  • 7 flatten cookies slightly.
  • 8 the dough can be frozen at this point, you can either bake from frozen or thaw and bake.
  • 9 bake at 350 for 8-10 mins for soft cookies, 10-12 mins for crunchier cookies.
