Oatmeal Cinnamon Coconut Chocolate Chip Cookies

Ingredients

- 1 cup butter, softened
- 1 cup packed brown sugar
- 3/4 cup sugar
- 2 teaspoons vanilla
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon salt
- 3 cups large-flake oats (not instant or quick oats)
- 1/2 cup miniature chocolate chip
- 1/2 cup flaked coconut
Recipe
- 1 set oven to 350°.
- 2 line a cookie sheet with foil and lightly spray with non-stick cooking spray.
- 3 in a large bowl cream the butter with sugars until fluffy.
- 4 add in the vanilla and eggs; beat well.
- 5 in another bowl, blend together the flour, baking soda, cinnamon, salt and oats; mix well to combine.
- 6 add the flour mixture to the creamed mixture along with the chocolate chips and coconut; mix well to combine.
- 7 drop dough by heaping tablespoonfuls onto prepared baking sheet.
- 8 bake for 8-10 minutes (longer for a crispier cookie).
- 9 remove to a rack to cool.
