Mom's Pepparkakor (gingerbread Cookies)

Total Time: 3 hrs 7 mins Preparation Time: 3 hrs Cook Time: 7 mins

Ingredients

  • 1 cup shortening
  • 1 cup sugar
  • 1 cup molasses
  • 1 egg
  • 2 tablespoons vinegar
  • 5 cups flour
  • 3 teaspoons grated gingerroot
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup shortening
  • 1 teaspoon vanilla
  • 1 lb powdered sugar
  • 4 tablespoons milk

Recipe

  • 1 cream shortening and sugar.
  • 2 beat in molasses, egg and vinegar.
  • 3 stir flour with ginger, soda, cinnamon, cloves and salt.
  • 4 blend into batter.
  • 5 chill for 3 hours.
  • 6 on lightly floured surface, roll dough to at least 0.125 inch thickness.
  • 7 cut into desired shapes with cookie cutter.
  • 8 place one inch apart on greased cookie sheet.
  • 9 bake at 375° for 5-6 minutes. cool slightly; remove cookies to rack and cool.
  • 10 mix shortening, vanilla, powdered sugar and milk.
  • 11 drizzle over cookies.
