Frosted Pineapple Cookies

Total Time: 37 mins Preparation Time: 20 mins Cook Time: 17 mins

Ingredients

  • 1 (8 ounce) can crushed pineapple
  • 1/2 cup shortening
  • 1 cup brown sugar, packed
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups confectioners' sugar

Recipe

  • 1 drain pineapple, reserving 3 tablespoons juice. set pineapple aside.
  • 2 set juice aside for frosting.
  • 3 in a mixing bowl, cream shortening and sugar.
  • 4 add egg; mix well.
  • 5 add pineapple and vanilla; mix well.
  • 6 combine flour, baking powder, baking soda and salt; stir into the creamed mixture.
  • 7 drop by tablespoonfuls, 2 inches apart onto greased baking sheets.
  • 8 bake at 325°f for 17-20 minutes or until golden.
  • 9 immediately remove to wire racks to cool.
  • 10 frosting:.
  • 11 in a small bowl, combine confectioners' sugar with enough of reserved juice to achieve a smooth spreading consistency.
  • 12 frost cooled cookies.
