Frosted Pineapple Cookies

Total Time: 27 mins Preparation Time: 10 mins Cook Time: 17 mins

Ingredients

  • 1 (8 ounce) can crushed pineapple
  • 1/2 cup butter, softened
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups powdered sugar

Recipe

  • 1 drain pineapple, reserving 3 tbsp juice.
  • 2 set pineapple aside.
  • 3 set juice aside for frosting.
  • 4 in a bowl, cream butter and sugar.
  • 5 add egg, mix well.
  • 6 add pineapple and vanilla, mix well.
  • 7 combine flour, baking powder, baking soda, and salt.
  • 8 stir into creamed mixture.
  • 9 drop by tsp 2" apart on greased cookie sheet.
  • 10 bake at 325° for 17-20 minutes.
  • 11 remove and cool on wire racks.
  • 12 frosting -- combine powdered sugar with just enough reserved juice to get a smooth spread.
  • 13 frost cookies when cool.
