Lemon Meltaways

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1/3 cup powdered sugar
  • 3/4 cup butter, sofened
  • 1 teaspoon grated lemon, rind of
  • 1 tablespoon lemon juice
  • 3/4 cup powdered sugar
  • 1/4 cup butter, softened
  • 1 teaspoon grated lemon, rind of
  • 1 teaspoon lemon juice

Recipe

  • 1 in large mixer bowl, combine all cookie ingredients.
  • 2 beat at low speed, scraping bowl often, until well mixed, about 2 to 3 minutes.
  • 3 divide dough in half.
  • 4 shape each half into 8x1-inch roll.
