Ingredients
- 1 1/4 cups all-purpose flour
- 1/2 cup cornstarch
- 1/3 cup powdered sugar
- 3/4 cup butter, sofened
- 1 teaspoon grated lemon, rind of
- 1 tablespoon lemon juice
- 3/4 cup powdered sugar

Recipe
- 1 in large mixer bowl, combine all cookie ingredients.
- 2 beat at low speed, scraping bowl often, until well mixed, about 2 to 3 minutes.
- 3 divide dough in half.
- 4 shape each half into 8x1-inch roll.
- 5 wrap in plastic food wrap.
- 6 refrigerate until firm (1 to 2 hours).
