Oatmeal Cookies

Ingredients
- Servings: 35
- 1 1/2 cups porridge oats
- 1 cup sugar
- 350 g self rising flour
- 1 1/2 cups plain coconut flakes (non sweetened or toasted)
- 200 g margarine
- 3 tablespoons honey
- 3/4 teaspoon baking soda
Recipe
- 1 mix first 4 ingredients well in a large bowl.
- 2 heat last 3 ingredients in a large pan over a low heat till come to a boil; remove from heat.
- 3 combine the dry ingredients with the hot mixture in pan.
- 4 press into a flat large baking tray lined with baking paper (about 35cmx35cm).
- 5 bake for about 10-15 minutes at medium heat until lightly golden.
- 6 remove and cut into squares (about 5x5cms).
- 7 pop back for a further 5-10 minutes.
- 8 remove and separate onto cooling rack.
