Oatmeal Cookies

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 35
  • 1 1/2 cups porridge oats
  • 1 cup sugar
  • 350 g self rising flour
  • 1 1/2 cups plain coconut flakes (non sweetened or toasted)
  • 200 g margarine
  • 3 tablespoons honey
  • 3/4 teaspoon baking soda

Recipe

  • 1 mix first 4 ingredients well in a large bowl.
  • 2 heat last 3 ingredients in a large pan over a low heat till come to a boil; remove from heat.
  • 3 combine the dry ingredients with the hot mixture in pan.
  • 4 press into a flat large baking tray lined with baking paper (about 35cmx35cm).
  • 5 bake for about 10-15 minutes at medium heat until lightly golden.
  • 6 remove and cut into squares (about 5x5cms).
  • 7 pop back for a further 5-10 minutes.
  • 8 remove and separate onto cooling rack.
