Pecan Crunchies

Total Time: 55 mins Preparation Time: 30 mins Cook Time: 25 mins

Ingredients

  • Servings: 16
  • 1 cup butter
  • 1 cup sugar
  • 2 cups flour
  • 2 teaspoons cinnamon
  • 1 egg, large
  • 1 cup pecans, finely chopped
  • 1/2 cup sugar
  • 2 teaspoons cinnamon

Recipe

  • 1 combine butter 1 cup sugar and egg yolk when i cut recipe in half i used a medim egg instead of the large eggs darlene used
  • 2 sift flour with 2 teaspoons cinnamon
  • 3 mix into butter mixture until thoughly blended.
  • 4 press lightly with floured hands into very well greased pan these things stick . shallow pan like a largecookie sheet 1/4 inch layer thick.
  • 5 beat egg til foamy.and almost stiff
  • 6 pour over layer spread out
  • 7 combine remaining sugar and cinnamon
  • 8 sprinkle over egg .
  • 9 sprinkle finely chopped pecans over sugar
  • 10 bake 20-25 minutes in 375 degree oven
  • 11 cut in squares while hot.
