Lemon Snowballs

Ingredients
- 1/2 cup butter
- 1/2 cup powdered sugar
- 1 1/2 cups all-purpose flour
- 3/4 cup cornstarch
- 1/4 teaspoon salt
- 2 teaspoons grated lemons, rind of
- 1 cup finely chopped blanched almond
- 1 cup powdered sugar
- 2 tablespoons butter, melted
- 1 tablespoon lemon juice
Recipe
- 1 preheat oven to 350 degrees.
- 2 in mixing bowl, mix butter and sugar until light and creamy, about 2 minutes.
- 3 mix in flour, cornstarch, salt and lemon peel.
- 4 shape into 1-inch balls.
- 5 roll in chopped nuts, pressing lightly into dough.
- 6 bake for 15 minutes or until pale golden.
- 7 remove to racks to cool.
- 8 frosting: in a small bowl, stir together frosting ingredients until smooth.
- 9 drizzle over cookies.
- 10 (if it is too thick, thin with a few drops of hot water).
