Lemon Snowballs

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 1/2 cup butter
  • 1/2 cup powdered sugar
  • 1 1/2 cups all-purpose flour
  • 3/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 teaspoons grated lemons, rind of
  • 1 cup finely chopped blanched almond
  • 1 cup powdered sugar
  • 2 tablespoons butter, melted
  • 1 tablespoon lemon juice

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 in mixing bowl, mix butter and sugar until light and creamy, about 2 minutes.
  • 3 mix in flour, cornstarch, salt and lemon peel.
  • 4 shape into 1-inch balls.
  • 5 roll in chopped nuts, pressing lightly into dough.
  • 6 bake for 15 minutes or until pale golden.
  • 7 remove to racks to cool.
  • 8 frosting: in a small bowl, stir together frosting ingredients until smooth.
  • 9 drizzle over cookies.
  • 10 (if it is too thick, thin with a few drops of hot water).
