Dinner Jacket Stuffed Potato

Ingredients

- 6 russett baking potatoes
- 1 tablespoon butter
- 1/2 cup diced green bell pepper
- 1/2 cup diced red bell pepper
- 2/3 cup sweet onion, chopped
- 4 ounces diced cooked ham
- 2 cups shredded colby-monterey jack cheese, divided
- 2 tablespoons milk
- 3 tablespoons sour cream
- 3 slices cooked bacon
Recipe
- 1 oven heated to 400*f scub potatoes.
- 2 pierce potatoes with a fork and bake for 1 hour.
- 3 melt butter in a nonstick skillet saute peppers and onions until tender add han and cook 5 minutes.
- 4 cool potatoes slightly and reduce oven temperature to 350*f.
- 5 slice the tops off the potatoes and scoop out the pulp reserve the jackets for restuffing, careful not to damage skins.
- 6 in bowl mash the pulp stir in 1 1/2 c cheese, milk, sour cream and sauteed vegetables.
- 7 stuff potatoes with pulp mixture, place on cookie sheet and top with remaining cheese and crumbled bacon.
- 8 bake about 20 minutes until heated through.
