Pillsbury's Chocolate Key Lime Calypso Bars

Ingredients
- Servings: 12
- 1 (18 ounce) package of refrigerated chocolate chunk cookie dough (pillsbury)
- 1 cup pistachios, chopped
- 1 cup shredded coconut
- 1 (14 ounce) can sweetened condensed milk
- 1/2 cup lime juice
- 3 large egg yolks
- 1/2 cup chocolate chips, melted
Recipe
- 1 preheat oven to 350°. line a 9x13 pan with aluminum foil, leaving enough foil to hang just under the outside edge of the pan.
- 2 combine the cookie dough with the pistachios and coconut.
- 3 press into prepared pan and bake for 10-15 minutes.
- 4 using a hand mixer, combine the sweetened condensed milk with the lime juice and the egg yolks.
- 5 pour mixture over the baked cookie bar crust.
- 6 bake 22-28 minutes until filling is set.
- 7 drizzle the melted chocolate over the bars.
- 8 cool at least 1 hour. refrigerate.
- 9 when ready to cut into bars, simply lift the aluminum foil out of the pan.
- 10 this step makes life a lot easier!
