Simply Potato Cake Bruschetta #sp5

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 1 (20 ounce) package simply potatoes® shredded hash browns
  • 2 large eggs, beaten
  • 3/4 cup shredded parmesan cheese
  • 24 fresh basil leaves
  • 1 cup diced roma tomato

Recipe

  • 1 preheat oven to 425 degrees f.
  • 2 in a medium bowl, combine potatoes and beaten eggs. using a tablespoon, spoon into 12 potato cakes on a non-stick cookie sheet. bake at 425 degrees f. for 8 minutes.
  • 3 remove from oven. turn potato cakes. return pan to oven and bake for 4 minutes. remove from oven.
  • 4 preheat oven to broil.
  • 5 mound one tablespoon parmesan cheese on each potato cake. place under the broiler and broil for 3 minutes. remove from oven. cool on pan for 3 minutes.
  • 6 place 2 basil leaves over the cheese on each potato cake, then top with diced tomatoes. place on serving platter and enjoy!
