Oatmeal Cookies

Total Time: 27 mins Preparation Time: 15 mins Cook Time: 12 mins

Ingredients

  • 2 1/2 cups sugar
  • 3 cups all-purpose flour
  • 2 teaspoons salt
  • 1 teaspoon baking soda
  • 1 cup shortening
  • 3 cups quick-cooking oats
  • 1 egg
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup chopped pecans, if desired

Recipe

  • 1 combine the first five ingredients; cut in shortening until crumbly.
  • 2 add oats and mix well.
  • 3 store in an airtight container in a cool dry place for up to 6 months.
  • 4 to prepare cookies: in a mixing bowl, combine 2 cups cookie mix, egg, milk and vanilla, mix well.
  • 5 fold in chocolate chips and pecans.
  • 6 drop by tablespoonfuls 2 inches apart onto greased baking sheet.
  • 7 bake: at 375°f for 10 to 12 minutes or until golden brown.
