Oven Caramelized Butternut Squash With A Taste Of Orange

Total Time: 1 hr 45 mins Preparation Time: 15 mins Cook Time: 1 hr 30 mins

Ingredients

  • 1 butternut squash
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon fresh ground black pepper
  • 2 -4 tablespoons grand marnier (may substitute fresh orange juice)

Recipe

  • 1 preheat the oven to 350 degrees.
  • 2 line a shallow baking dish or rimmed cookie sheet with aluminum foil.
  • 3 using a vegetable peeler, peel the squash, remove the seeds, and cut into 1-2" chunks.
  • 4 toss the squash with the olive oil and season with salt and pepper.
  • 5 place in the oven and bake for 30 minutes, then shake the pan so all of the pieces will cook evenly, and bake for another 20 minutes.
  • 6 stir in the grand marnier, and bake for another 15-25 minutes until the squash is browning on the bottom and looking caramelized and bubbling.
  • 7 remove from the oven and serve.
