Ingredients

- 3 3/4 cups flour
- 5 eggs
- 3 tablespoons olive oil
- 1 pinch salt
- 2 cups fat-free ricotta cheese
- 1 cup part-skim mozzarella cheese
- 3 eggs
- 1/2 cup lowfat parmesan cheese
- 1/4 cup parsley
Recipe
- 1 mix dough ( first four ingredients) for 10 to 15 minutes.
- 2 rest one hour.
- 3 roll out to 1/16th inch thickness.
- 4 pipe filling onto dough.
- 5 add another dough layer.
- 6 cut with cookie cutters.
- 7 boil in salt water for 3 to 4 minutes.
- 8 put in your favorite sauce.
