Guilt Free Oatmeal Cranberry Cookies

Total Time: 23 mins Preparation Time: 15 mins Cook Time: 8 mins

Ingredients

  • Servings: 30
  • 1 cup dried cranberries (recommended -- craisins)
  • 1/4 cup water
  • 1/3 cup egg beaters egg substitute
  • 1 tablespoon molasses
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 1 1/2 teaspoons vanilla extract
  • 1 cup whole wheat flour
  • 1 1/2 teaspoons baking powder
  • 2 1/2 cups quick-cooking oats
  • 1/2 cup nonfat dry milk powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg

Recipe

  • 1 in a medium bowl, combine the raisins, water, egg whites, and molasses.
  • 2 stir until well mixed.
  • 3 add the sugar, brown sugar, and vanilla.
  • 4 stir to combine.
  • 5 in a small bowl, combine the flour, nonfat dry milk powder, baking powder, and cinnamon.
  • 6 mix well.
  • 7 slowly add the flour mixture to the raisin mixture.
  • 8 stir in oats.
  • 9 place on parchment paper.
  • 10 bake at 350° for 8-10 minutes or until edges are light golden-brown (i baked mine for 7.5 minutes to keep them very chewy! yum!).
  • 11 remove cookies .
  • 12 allow them to cool.
