Orange Sugar Rollouts

Ingredients

  • Servings: 42
  • 2/3 cup shortening
  • 3/4 cup sugar
  • 1 egg
  • 4 teaspoons milk
  • 1/2 teaspoon grated orange peel (can use up to 1 teaspoon)
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 4 cups confectioners' sugar
  • 1 teaspoon vanilla
  • 1/2 teaspoon grated orange peel
  • 2 tablespoons orange juice (or more to achieve desired consistency)
  • yellow food coloring (optional)

Recipe

  • 1 in a large mixing bowl, cream shortening and sugar until light and fluffy. beat in the egg, milk, orange peel and vanilla. combine the flour, baking powder and salt; gradually add to the creamed mixture and mix well.
  • 2 on a lightly floured surface, roll dough to 1/4 inch thickness. cut with floured 2 1/2 inch cookie cutters. place 1 inch apart on greased baking sheets. bake at 375 degrees for 6 to 8 minutes or until lightly browned. remove to wire racks to cool.
  • 3 in a large mixing bowl, beat the butter, confectioners' sugar, vanilla, orange peel and enough orange juice to achieve spreading consistency. add food coloring if desired. frost cooled cookies.
