Lemon Sugar Wafers

Ingredients
- 2 cups sugar
- 1 cup butter, softened
- 2 eggs
- 1 tablespoon grated lemon zest
- 1/4 cup lemon juice
- 1 teaspoon vanilla
- 3 1/2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cream of tartar
- granualated sugar
Recipe
- 1 cream sugar, butter, eggs, lemon zest, juice and vanilla in large mixing bowl until smooth.
- 2 stir in flour, baking soda, salt and cream of tartar until well blended.
- 3 refrigerate 1 hour.
- 4 shape dough into 1 inch balls. roll in sugar. place 2 inches apart on prepared cookie sheet.
- 5 bake for 15 to 20 minutes in a 325 degree oven or until light golden brown.
- 6 cookies will be soft in the centre.
- 7 cool on sheet for 5 minutes, then transfer to rack to cool completely.
