Lemon Sugar Wafers

Total Time: 1 hr 40 mins Preparation Time: 1 hr 20 mins Cook Time: 20 mins

Ingredients

  • 2 cups sugar
  • 1 cup butter, softened
  • 2 eggs
  • 1 tablespoon grated lemon zest
  • 1/4 cup lemon juice
  • 1 teaspoon vanilla
  • 3 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cream of tartar
  • granualated sugar

Recipe

  • 1 cream sugar, butter, eggs, lemon zest, juice and vanilla in large mixing bowl until smooth.
  • 2 stir in flour, baking soda, salt and cream of tartar until well blended.
  • 3 refrigerate 1 hour.
  • 4 shape dough into 1 inch balls. roll in sugar. place 2 inches apart on prepared cookie sheet.
  • 5 bake for 15 to 20 minutes in a 325 degree oven or until light golden brown.
  • 6 cookies will be soft in the centre.
  • 7 cool on sheet for 5 minutes, then transfer to rack to cool completely.
