Lemon Tea Cookies

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • 1 2/3 cups flour
  • 1/3 cup confectioners' sugar
  • 1 cup margarine, softened
  • 1 teaspoon vanilla
  • 1 egg, beaten
  • 2/3 cup sugar
  • 2 -3 teaspoons grated lemon rind
  • 1 teaspoon cornstarch
  • 1 teaspoon salt
  • 3 tablespoons lemon juice
  • 1 tablespoon margarine
  • confectioners' sugar

Recipe

  • 1 in medium bowl, combine first 4 ingredients; blend well.
  • 2 chill dough.
  • 3 heat oven to 350 degrees f.
  • 4 shape dough into 1-inch balls.
  • 5 place on ungreased cookie sheets.
  • 6 with thumb, make imprint in center of each cookie.
  • 7 bake 8-10 minutes until lightly brown.
  • 8 cool.
  • 9 to make filling, combine all filling ingredients in medium saucepan, except for confectioners sugar.
  • 10 cook over low heat, stirring constantly until smooth and thickened.
  • 11 cool.
  • 12 top each cookie with filling.
  • 13 sprinkle with confectioners sugar.
  • 14 store single layer, loosely covered.
