Lemon Tea Cookies

Ingredients
- 1 2/3 cups flour
- 1/3 cup confectioners' sugar
- 1 cup margarine, softened
- 1 teaspoon vanilla
- 1 egg, beaten
- 2/3 cup sugar
- 2 -3 teaspoons grated lemon rind
- 1 teaspoon cornstarch
- 1 teaspoon salt
- 3 tablespoons lemon juice
- 1 tablespoon margarine
- confectioners' sugar
Recipe
- 1 in medium bowl, combine first 4 ingredients; blend well.
- 2 chill dough.
- 3 heat oven to 350 degrees f.
- 4 shape dough into 1-inch balls.
- 5 place on ungreased cookie sheets.
- 6 with thumb, make imprint in center of each cookie.
- 7 bake 8-10 minutes until lightly brown.
- 8 cool.
- 9 to make filling, combine all filling ingredients in medium saucepan, except for confectioners sugar.
- 10 cook over low heat, stirring constantly until smooth and thickened.
- 11 cool.
- 12 top each cookie with filling.
- 13 sprinkle with confectioners sugar.
- 14 store single layer, loosely covered.
