Passover Low-fat Granola

Ingredients
- Servings: 12
- 3 cups matzo farfel
- 1/2 cup shredded coconut
- 1/2 cup chopped nuts (, your choice)
- 1/4 cup oil
- 1/3 cup sugar (or other sweetener)
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- grated orange rind
- 1 cup raisins (or other chopped dried fruit)
Recipe
- 1 preheat oven to 350 degrees f.
- 2 combine farfel, coconut and nuts in a large bowl.
- 3 spread onto non-stick cookie sheet.
- 4 bake 20 minutes, tossing several times.
- 5 meanwhile, in a two-quart saucepan combine oil, sweetener and salt.
- 6 simmer, stirring constantly.
- 7 add farfel mixture.
- 8 stir until coated evenly.
- 9 add cinnamon and grated orange peel.
- 10 spread onto non-stick cookie sheet.
- 11 bake 20 minutes, stirring frequently until brown.
- 12 remove and cool.
- 13 add raisins.
- 14 break up any large chunks with a spatula.
- 15 store in closed container in the refrigerator until served.
