Passover Low-fat Granola

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 12
  • 3 cups matzo farfel
  • 1/2 cup shredded coconut
  • 1/2 cup chopped nuts (, your choice)
  • 1/4 cup oil
  • 1/3 cup sugar (or other sweetener)
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • grated orange rind
  • 1 cup raisins (or other chopped dried fruit)

Recipe

  • 1 preheat oven to 350 degrees f.
  • 2 combine farfel, coconut and nuts in a large bowl.
  • 3 spread onto non-stick cookie sheet.
  • 4 bake 20 minutes, tossing several times.
  • 5 meanwhile, in a two-quart saucepan combine oil, sweetener and salt.
  • 6 simmer, stirring constantly.
  • 7 add farfel mixture.
  • 8 stir until coated evenly.
  • 9 add cinnamon and grated orange peel.
  • 10 spread onto non-stick cookie sheet.
  • 11 bake 20 minutes, stirring frequently until brown.
  • 12 remove and cool.
  • 13 add raisins.
  • 14 break up any large chunks with a spatula.
  • 15 store in closed container in the refrigerator until served.
