Peanut Butter And Chocolate Chip Cookie Cake

Ingredients

  • 1 cup almond flour or 1 cup all-purpose flour
  • 4 tablespoons granulated sugar
  • 4 tablespoons light brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 extra-large eggs
  • 1/2 cup natural-style peanut butter
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/4 cup water
  • 7 tablespoons chocolate chips

Recipe

  • 1 grease 8-inch round cake pan. line bottom with circle of parchment paper; set aside.
  • 2 preheat oven to 350 degrees.
  • 3 in a medium bowl, combine the flour, sugars, baking powder and salt; set aside.
  • 4 in the bowl of a stand mixer, cream together the eggs, peanut butter, oil, vanilla extract and water.
  • 5 slowly add the flour mixture to the egg mixture, mixing well after each addition. once all the flour mixture is in, beat until smooth.
  • 6 gently fold the chocolate chips into the batter.
  • 7 pour batter into prepared pan and bake for 25 minutes, until the outside of the cake is firm and bounces back to the touch.
  • 8 cool on rack before cutting.
